I am on my healthy eating binge, and recently added barley to my pantry. Barley is one of those wonder grains which is supposed to be extremely good for you, but like all food that is very good for you, is not eaten often.

This recipe is more of a salad, and incorporates cooked barley with roasted eggplants, onions, and tomatoes. The dressing is a mixture of olive oil, red wine vinegar, balsamic vinegar, a dash of honey, salt and pepper.
