A Shishito pepper is a sweet Asian pepper. About one out of every ten peppers is spicy! So fun to eat with friends trying to figure out which one the hottie is. Simple to cook and great for snacking with an ice cold Corona beer and lime.
I found this batch of peppers in March at Trader Joes. Seems like they are seasonal and not available year long, so try this quick recipe when you can get your hands on some of these peppers.
Ingredients: 1 package shishito peppers 1 tbsp olive oil kosher salt, to taste Method: Set a cast iron pan on medium heat. Add peppers to the pan, and let them pan roast (no oil yet) until the skins start to blister evenly as you see in the picture. When all the peppers are blistered and cooked, add olive oil and toss to coat all peppers with the oil. Transfer to a serving dish and sprinkle with kosher salt.
