Pan seared halibut, on a bed of parmesan polenta, with chopped beefsteak tomato salad and steamed broccolini, all finished with a dressing of olive oil, balsamic vinegar, grated garlic and thinly chopped basil. Thanksgiving mashed potatoes, stuffed into a paratha! Parathas are a flaky Indian flatbread, sometimes filled with savory fillings, in this case oniony garlicky mashed potatoes. Some finely chopped jalapeños and cilantro aided the transformation. Tear to reveal the glorious layers, serve with creamy buttermilk. Chicken Tikka Masala - a very British recipe with an abundance of Indian spices and flavors. A tomato and onion based sauce is flavored with ginger, garlic, green chilies and seasoned with warming spices like cinnamon cardamom cloves fennel cumin and coriander seeds. Toss in some cubed tandoori chicken and the dish is done. You can add a good dose of heavy cream but my version is only with a teaspoon of cream for garnish. Serve with buttered rice or naan. Fried green tomatoes with a creole seasoned remoulade. The crispy outer layer is perfect with the lightly tangy firm green tomato interior. Ligurian focaccia, replete with olive oil. A dear one visited Camogli recently and couldn’t stop praising the focaccia from there! This recipe is an amalgamation of the wealth of information online. This bread got validated as great from my traveler and I have to say it tastes amazing.
